I have a new obsession… And it’s squash.
Seriously. I usually opt for sweet potatoes as my dinner carb-of-choice, but all of the fall squashes have got me going crazy! Butternut, delicata, acorn… They’re each unique and delicious in their own special way!
If you’re in a food rut and looking for a way to spice up your lunches or dinners, I suggest hightailing it to your local Trader Joes and picking up a 99 cent (ridiculously cheap) fall squash, firing up your oven, and giving it a good roast.
You won’t be disappointed.
But enough of my ranting – on to your regularly scheduled What I Ate Wednesday programming.
Post-Pure Barre Purely Elizabeth Ancient Grain egg white oatmeal with pomegranate seeds, pistachios, and almond butter.
The texture of these oats is similar to oat bran – so a lot less chewy than normal oats. I highly suggest picking some up if you like smoother textures!
Hardboiled egg, carrots, and a few un-pictured almonds.
I’m so predictable.
Pure Barre must have kicked my metabolism into overdrive this morning, because I was starving for lunch! I could barely make it till 12 when I had time to eat. Luckily I had some deliciousness packed and waiting for me when I got back to my desk.
A kale salad massaged in lemon olive oil with quinoa, mini sweet peppers, beets, avocado, and nutritional yeast! Plus an apple and Wild Friends Vanilla Espresso almond butter on the side.
My obsession with Trader Joe’s Just Mango slices continues. Today I packed a “trail mix” of sorts with a slice of dried mango, a dried turkish apricot, and some raw pecan pieces.
Plus a kind of funky lookin’ tiny pear.
I got home from work a little later than normal, so I grabbed a handful of Whole Foods popcorn to tide me over while I cooked dinner! Popcorn was one of my favorite snacks growing up, so it always takes me back to sleepovers and watching movies at home in the pre-college days.
Dinner was a random, delicious bowl of veggie goodness!
I sautéed some kale, chickpeas, mushrooms, and turmeric cauliflower in liquid aminos and garlic, then paired it with roasted butternut squash & a dippy egg. All topped with siracha, obviously.
I would like to credit my post title to my witty and sassy friend Clara. She commented the pun on my photo and it was too good not to share!
Plus a piece of frozen dark chocolate to round out the meal… 🙂
Another night, another classic – microwaved banana slices, frozen berries, and Wild Friends Honey Pretzel pb!
PS I’m totally obsessed with these mini dish/bowls from Target! I use them for just about everything.
