New Years 2016

Hi everyone – Happy 2016!

What did you guys do to celebrate the new year? Any fun stories?

Mine was an absolute blast and pretty low key. A group of us went up to my best friend Savannah’s lake house on Lake Weiss and celebrated with lots of good food and quality time. I wanted to do a little catching up through photos to share a little bit about how the holiday went down.

Let’s do it!


I started off NYE with this delicious not-so-green smoothie made with frozen spinach, kale, frozen blueberries/banana, Chocolate Vega One Protein & Greens, ground chia seeds, Essentially Coconut Cashew Coconut Butter, and almond milk.


And because toppings game always gotta’ be strong, I added unsweetened coconut chips, Purely Elizabeth Blueberry Hemp granola, and cacao nibs.


After breakfast I made the most wonderful pesto white bean dip from the Thug Kitchen Party Grub cookbook for an NYE appetizer. It was a huge hit and I highly suggest making it if you like pesto and hummus-y dips.


The views from my friend’s lake house are beautiful! It’s so secluded and relaxing.


The water at the lake was up so high that all the docks were completely flooded… It was so crazy to see.


My friend Savannah and I surprise-matched each other with our holey black jeans and white converse. 🙂


In the evening on NYE we enjoyed heavy appetizers instead of a real meal for dinner. Pictured we have veggies, homemade salsa, white bean pesto dip, hummus phyllo cups, and Trader Joe’s feta and caramelized onion bites. Un-pictured were homemade pizza bites, buffalo chicken dip, and sweet potato brownies.

The majority of the night consisted of hanging out, catching up, and playing Cards Against Humanity.


On New Years Day, Savannah made this delicious breakfast spread for everyone to enjoy including eggs with veggies and feta, hash browns, biscuits, bacon, and mimosas. I had a bite of eggs along with my usual bowl of oatmeal and they were delicious!


After breakfast we ventured out to do some exploring and check out Little River Falls. The waterfall was so forceful from the recent rain!


This picture makes me laugh because you can see the look of “freezing” on Blake’s face. It was so cold!

After exploring, we headed back to Savannah’s lake house where her mom was cooking up a delicious New Years Day lunch. Her mom is one of my favorite people in this world and is such an amazing cook. We made a few bloody marys upon arrival to tide us over. 🙂


The lunch spread included cornbread, collards, black eyed peas, brunswick stew, and a variety of hot sauces. Her mom even made me a special batch of collards and black eyed peas that didn’t use any animal products which meant a lot to me. I expressed my gratitude by clearing my plate and heading back for seconds. 🙂


Later that evening when our stomaches started rumbling again, we whipped up some guacamole in preparation for a family-style taco dinner. Savannah makes the best guacamole on the earth, so I am hoping she will let me share her method or do a guest post for me… Stay tuned!


My plate included two tacos with veggies, organic refried back beans, lettuce, salsa, and tempeh  with guacamole and rice on the side. This definitely sent me over the edge into the way-too-full feeling, but it was SO good so I regret nothing.


Breakfast on Saturday was eaten in the car on the drive home. Yes I packed my own oatmeal/berries and yes I brought a whole jar of peanut butter. Please judge.


My body was craving all the veggies after the weekend, so Saturday evening I roasted some tempeh, a purple sweet potato, and broccoli, drizzled it with tahini, and called it dinner.


Breakfast on Sunday featured some delicious raspberry chia jam I made on a whim. It was ridiculously easy and very tasty so I might post the recipe if you guys are interested.

Oh, I also chopped 5 inches of my hair off…


And it felt amazing. 🙂

    I love these posts, please do more!! It looks like you had an awesome New Years celebration! You and your boyfriend look so cute together!! I pack my own oatmeal, nut butters, and fruit too so I definitely don’t judge 😉 You look gorgeous with short hair and I can’t wait to follow along with your adventures in 2016!! Happy New Year!!
