Hi everyone, happy Wednesday!
If you are reading this, I am on my way to New York City. I am traveling to the Big Apple for the first time on a two day work trip, and I am excited to say the least!
One of my best friends informed me over the weekend that she was very unhappy with me for missing last week’s WIAW post… So I am back in full force 😉
I figured I would mix it up a little bit today, and instead of posting a day’s worth of weekday eats, post a day’s worth of weekend eats! I eat a little differently when I’m at home during the day vs. when I’m at work since I don’t have to plan and pack my food, so I decided to document my eats this Sunday for a little change!
It was a rainy morning, and I slept in until 9:00am… So an all-star breakfast was definitely in store. I whipped up most delicious bowl of oats made with half a banana, cinnamon, and chia seeds, topped with strawberries, the other half of the banana, slivered almonds, and some Purely Elizabeth blueberry hemp granola.
Mid-Morning Caffeine Fix:
After breakfast I headed out to do some grocery shopping, where I picked up a small cold brew to enjoy on the way home. I hadn’t had coffee in a few days, so it felt good to get a dose of caffeine back in my life 😉
Please excuse the less than luster Snapchat photography – I snapped this photo while FaceTiming with my best friend Julia who just moved to New Haven. Lunch was a toasted ezekiel english muffin two ways: half topped with avocado, hardboiled egg, and red pepper flakes, and the other with hummus, cucumber, tomato, and pepper.
Also, here’s a really sad photo of some berries and figs I had on the side. I had these blackberries x3, but the photo didn’t happen until I popped a few into my mouth. Whoops 🙂
Lunch photography game so not strong.
Snacked on a couple leftover sweet potato wedges with hummus after a super hard Pure Barre class. It was a donation-only class at my studio today, so I was joined by two of my best friends to take their first ever class! It was so much fun LTB-ing with some of my favorite people. It made me miss taking Pure Barre in college, when you could almost always count on having a friend by your side to power through class with. 😉
This was so fantastic! I roasted some okra and whipped together a warm quinoa salad with arugula, roasted tempeh, mini heirloom tomatoes, coconut oil, salt, pepper, red pepper flakes, and tahini. I think I might share this recipe with you guys later this week… It was that good!
I baked up a batch of healthy banana bread “cookies” this week, so I topped one with some almond butter and called it dessert. These cookies were really good, but the recipe needs a little refining before I share it with you. 🙂
