WIAW: Topped With Tahini

Happy hump day!

I hope things are going well in your neck of the woods. I’m coming at you live with this week’s What I Ate Wednesday post. I’ve been continually trying to mix things up in my meals, so I hope you enjoy seeing some different foods popping up in these parts 🙂

Breakfast

Currently working my way through 5 empty nut butter jars for overnight oats… 3 down, 2 to go!

almond buttah makes it bettah

Post-Pure Barre breakfast today was overnight oats in a too-empty jar of Trader Joe’s almond butter. I made these oats with 1/2 cup of rolled oats, 1 tbsp chia seeds, 2/3 scoop of Vega One vanilla protein, and 2/3 cup of unsweetented vanilla almond milk. I let them sit in the jar overnight and topped them with nuked frozen blueberries and fresh raspberries in the morning.

Not going to lie – the promise of a good breakfast is what gets me through 99% of my morning workouts 🙂

Mid-morning snack

Homemade “trail mix” + an unpictured hardboiled egg.

I made the trail mix by combining raw cashews, a piece of Trader Joe’s Just Mango Slices, and a dried turkish apricot.

Lunch

I’ve been eating this lunch the past few days and can’t get enough! A kale salad massaged with apple cider vinegar, lemon juice, and nutritional yeast, topped with mini bell peppers and edamame plus a sweet potato with tahini, a hardboiled egg, and a honeycrisp apple.

For “dessert” I enjoyed a Trader Joe’s dark chocolate honey mint. These little guys taste like a York peppermint patty but have only 3 ingredients – honey, dark chocolate liquor, and mint extract.

Afternoon snack

I have been reunited with Larabars and it feels (and tastes) so good. I love their simple ingredient list and trusty tastiness for convenient, healthy snacking. The cashew cookie flavor is my favorite!

Dinner

A good quinoa bowl will never steer you wrong. Tonight I whipped up some turmeric quinoa (quinoa, coconut oil, turmeric, and pink himalayan sea salt) and topped it with roasted broccoli/rainbow carrots/butternut squash/tempeh, pomegranate seeds, & tahini.

These flavors paired together like a dream, and the tahini was the perfect cherry on top. I think I could put it on just about anything. 🙂

Night snack

Back to basics with a little twist. Frozen berries, Wild Friends Sesame Cranberry Peanut Butter, cacao nibs, coconut chips, & Purely Elizabeth granola put in a mini bowl and heated in the microwave until melty.
