Hello my friends! How’s it going?
Despite the super unseasonal temperatures we are experiencing in Atlanta, I am so excited for the upcoming holiday. I don’t care if I’m wearing shorts on Christmas morning – I’m in the Christmas spirit and nothing can stop me!
A quick side note before we get started on today’s foodie recap. I’ve noticed that I always seem to document Monday eats for my What I Ate Wednesday posts. I’m going to try to mix it up in the next few weeks to show you what Friday, Saturday, and Sunday eats are like for me. They tend to look a little different and less planned than my weekday eats, which I’m sure many of you can relate to.
Anyways, onto the food!
I started Monday morning off with an early wake up call and a morning workout. I always feel better during morning workouts when I put something in my stomach, so I ate half of a banana before I left. I’m so proud of 5:00am Bailee for remembering to take a picture of it.
My workout consisted of 35 minutes of walk/run/sprint intervals on the treadmill, a short arm workout, and some stretching. After I got home, I showered as quickly as humanly possible so I could start making breakfast. I was starving!
As I was cooking, I brewed up a cup of Trader Joe’s Wintry Blend Coffee. I was totally sold on this flavor after sampling it in the store this weekend, and was just as pleased when I whipped it up at home.
Before sitting down to eat, I took one of these probiotics I picked up at Whole Foods this weekend. I’ve been wanting to start taking a probiotic for a while, but finally followed through this weekend. It’s only been a few days, so I will be sure to report back after a month or so if I notice any changes.
I tamed my morning hunger beast with a bowl of egg white oatmeal. I stirred cinnamon and frozen blueberries into the oats and topped them with fresh blackberries and Trader Joe’s creamy almond butter. It hit the spot!
Blackberries were on sale this weekend at Trader Joe’s and they are so plump and delicious. My love for fresh berries is unreal and I am already looking forward to summer when they are in season again!
After heading to work and playing some Monday morning catch-up, I found my stomach growling around 9:45. I usually eat something small between 10 and 11 to tide me over until lunch, but I needed a little more, a little sooner today. I dug into my bar stash and ate a chocolate coated mint square bar.
I think my metabolism was in overdrive from the previous day’s Pure Barre Platform class and this morning’s workout. I’m not complaining!
Around noon I was ready to dig into this colorful packed lunch. On the menu was a kale salad massaged in apple cider vinegar and lightened up lemon tahini dressing with red bell pepper, red onion, avocado, cucumber, and a hardboiled egg. On the side I enjoyed some carrots with beet hummus and grapes.
I needed a little more substance after this, so I also enjoyed a vegan banana chocolate muffin. Are you guys sick of these yet? 🙂
All my meetings were knocked out early in the day, so the rest of my afternoon was spent working at my desk. I wrote myself a “schedule” with different tasks assigned to certain timeframes, which really helped me focus and tackle everything I needed to get done. You should totally try this if you sometimes struggle with long uninterrupted work sessions!
And because no work session is complete without snacks, I noshed on some Just Mango Slices from Trader Joe’s and almonds.
Around 4:45, my coworkers asked if I wanted to join in on an impromptu happy hour. I’m not a huge weeknight drinker, but a beer sounded really good so I decided to be spontaneous and go for it. We headed over to World of Beer where I ordered one of my go-to’s – a Terrapin Rye Pale Ale.
Totally not going to lie, drinking a beer at 5:00 on a Monday felt super cool.
I headed home a little after 6:00 and was starving when I walked through the door. Thankfully I had spaghetti squash with vegan tomato basil cream sauce prepped and ready in the fridge. I paired it with some fresh roasted asparagus and tempeh and called it dinner. I also took another probiotic on the side.
And because when you eat fake carbs for dinner, you have to refuel with real carbs for dessert. 🙂 I enjoyed some Pumpkin Puffins cereal with almond milk courtesy of my sweet friend Danielle. We did a foodie swap and I received my package from her this weekend. Stay tuned for a post on this later!
I also licked the sun butter spoon while packing my lunch for tomorrow, but I’m not sure if that counts. 😉
Afterwards I called it a night and swan dove into my bed to continue reading Pretty Girls by Karin Slaughter… It’s getting crazy my friends!
