I hope your week has been going well. I will say that I’m still adjusting to the whole daylight savings time thing. Coming home from an after work run on Monday it was dark outside, and coming home from my 5:30am Pure Barre class the sun was rising… So weird!
It might be dark by 6:00pm… But hey, at least I can photograph my breakfast in natural lighting?
It’s the little things.
The eats I am sharing today are from Monday. The day started off on a dreary, rainy note, so I opted to sleep in an extra 20 minutes than I normally would have. Thankfully I had overnight oats prepped in the fridge, so breakfast was a breeze!
Overnight oats in an empty Trader Joe’s almond butter jar. I swear I go through nut butter like water… No complaints 🙂
I topped my oats with some raspberries and frozen strawberries that I nuked in the microwave. Tasty and filling!
I stopped at the ‘bucks on the way to work to pick up a coffee using a gift card my bestie Dani gave me. I was a little too excited to see my coffee handed to me in a bright red cup…
You know what that means – its officially the holiday season!!
This morning’s snackity was the perfect combo.
A hardboiled egg, sliced red bell pepper, and un-pictured cashews. I’m pretty obsessed with cashews lately- I think they’re tied with almonds as my favorite nut.
Lunch was so delicious! I packed a kale salad massaged in ACV/olive oil/nutritional yeast with chickpeas, golden raisins, and sunflower seeds, plus a cup of Trader Joe’s carrot ginger soup, an apple, and some un-pictured almonds.
The highlight was definitely the salad – I will be making this every day for the rest of the week – you just watch. 🙂
I usually shy away from pre-packaged soups due to the sodium content, but this one was calling my name at the Joe so I had to give it a go! It was quite tasty, and satisfied my soup craving perfectly.
I then proceeded to end the meal on a sweet note with a cup of chocolate mint tea.
I absolutely love drinking tea in the afternoons at work. I currently have four different types at my desk to choose from.
This afternoon I was super excited to dig into my snack, because it featured two of my favorites!
A peanut butter RXBar and a sliced kiwi. I impulse-bought a bag of kiwis at Trader Joe’s this weekend and am so glad I did! They are seriously delicious and always feel like a treat when I eat them.
Dinner was served after a 3-mile run and stretch sesh after work. I was ravenous when I got home, and was so glad to have dinner prepped when I walked in the door.
Garlic roasted broccoli, roasted kabocha squash, baked tofu, and a dippy egg. Served with a fork-full of hummus & hot sauce. The only thing I had to cook was the egg – the rest I simply popped in the microwave… Success!
Noted to add – I am absolutely loving kabocha squash! It’s my first of the season, and I’m already planning on picking another one up this weekend.
A medjool date topped with Wild Friends Sugar Cookie peanut butter. This genuinely tastes 10x better than any cookie in my book.
