WIAW: Post-Travel Food

Hola everybody!

I hope your week is going well. Mine has been a bit atypical, because I spent Sunday and Monday in New York City for work. The trip was short and sweet (departing before 9 am on Sunday and returning at 7 pm on Monday), and filled with tons of good food. Here are a few eats from the trip…

Sunday breakfast at the airport – pumpkin spice overnight oats in an empty jar of Wild Friends Cinnamon Raisin PB + a tall Pike

Sunday lunch – a kale salad from Moaz with literally everything… Falafel, tauboulieh, veggies, feta, ago, hummus, and a vegan tahini sauce. When in New York, right?

“The Powerhouse” smoothie for Monday’s breakfast – kale, banana, almond butter, cashew hemp milk, & brown rice protein.

You definitely will not go hungry when visiting NYC. πŸ™‚

Needless to say, when I got back in town on Monday evening I was more than readyΒ to get back in my kitchen toΒ cook up home some homemade meals.

In today’s WIAW, I am sharing with you all my eats from my first day back in town!

Breakfast

The ugliest/most delicious egg white oats with frozen blueberries and almond butter.

I think I ate this breakfast 75% of my senior year. It will always rank as my #1 go-to – simple, efficient, and well-rounded nutritionally.

Lunch

I was oddly not hungry for my morning snack, but when 12 o’clock rolled around, I was ready to dig in to lunch!

I didn’t feel like putting much effort into packing lunch on Monday night – so Saturday’s leftovers came in for the save! Leftover roasted brussel sprouts, cauliflower mash, & edamame, plus an apple and a hard boiled egg. I also had a spoonful of Wild Friends Vanilla Espresso Almond Butter, but it did not make the photo.

Afternoon snack:

My second and final Ginny Bakes bar sent over fromΒ Sarah. So in love with these!

Dinner

I worked out in the evening, and was more than ready to sit down toΒ whip up an awesome dinner when I got home.

I roasted an acorn squash and stuffed half of it with quinoa, spinach, sliced almond, goat cheese, and hemp hearts with roasted asparagus on the side. So fall!

Night snack

I received a jar of Essentially Coconut butter in the mail (creamy cashew flavor), and was so excited to give it a try!

I heated up a banana and a spoonful of the coconut butter in the microwave, then topped it with some Purely Elizabeth granola and cinnamon. SO DREAMY.

And there you have it!
