Some days your food just blows it out of the park.
I’m talking 10/10, Olympic gold medal kind of delicious.
Today was one of those days.
I woke up ready to eat my left pinky finger, and sped through my morning routine with breakfast on the brain. I whipped up some no-nonsense cinnamon egg white oats and topped them with fresh berries and almond butter.
I also had a bite of cashew butter after this because I wasn’t quite full. (I was not joking about my pinky finger)
Around 10am my stomach was rumbling again, so I reached into my super cool (i.e. nerdy) lunch box and pulled out a vegan chocolate banana muffin. I think I will be making these muffins every week for the rest of my life. Or at least every time I have ripe bananas. They’re that amazing.
At lunch time, I fueled up for some Cyber Monday shopping with this delicious spread. Today’s lunch consisted of fall superfood salad, a Rudi’s multigrain & flax tortilla with smashed avocado, 2 hardboiled eggs, and a chocolate-coconut energy bite.
The salad and the wrap were definitely the highlight. The sweetness of the salad went perfectly with the creamy, savory-ness of the avocado tortilla.
Move over, avo toast. Avo ’tilla is in town.
Around 3pm my body was telling me it was time for another snack, and I was there to listen. I whipped out a trusty chocolate cherry square bar from my snack reserves and dug in.
After wrapping up at the office around 5, I headed out to the gym for a workout, eating an orange en route.
I bought a bag of navel oranges from Trader Joe’s this weekend, so I have a ton sitting at my apartment awaiting my use. There will be no lack of vitamin C around these parts!
My workout consisted of a 35 minute run/walk on the treadmill. My muscles were tight from the previous day’s Pure Barre class, so this was just what I needed to stretch my legs and get some movement in.
By the time I was done, dinner was the only thing on my mind.
I was so thankful for meal prep when I walked in the door. Onto the stovetop went a vegan broccoli cheeze chickpea burger and an egg (let’s not mention the egg that fell and cracked on the floor), and into the microwave went leftover sweet potato rounds and brussels sprouts.
Add a dollop of hummus here, a waterfall of hot sauce there, and BOOM. Dinner in 10.
I let the yolk run all over the chickpea burger and onto the roasted veggies. It was so heavenly, I could not even.
After a shower and catching up on some blogs, I dug into a post-dinner sweet snack featuring half a banana and my current nut butter of choice. If you haven’t already, pick up this cashew butter from Trader Joe’s the next time you pop in! It’s magical.
I also enjoyed a cup of un-pictured healthy hot cocoa made by heating up a mug of unsweetened vanilla almond milk and stirring in unsweetened cocoa powder and chocolate stevia drops.
My belly and heart are happy and it feels so good.
