WIAW: Mixing It Up

Helloooo my dear blog readers. How’s it going?

I’m excited to dive right in to this What I Ate Wednesday because on this day in particular, I mixed up quite a few of my normal eats.

Let’s get right to it!

Breakfast

Chia seed oats were on the menu for a dreary Monday morning.

Oats cooked in the microwave with chia seeds, 1/2 a banana, & cinnamon. Topped with the remainder of the banana, raspberries, and Justin’s almond butter.

Morning Snack

I forgot to catch a photo (you’d think I’d learn by now?!), but mid-morning snackage included some baby carrots, a hardboiled egg, and some Dunkin’ Donuts coffee. I never buy coffee before work (too expensive and time consuming), but I was out of grounds and in serious need of caffeine. 😉

Lunch

Lunch was eaten during a lunch meeting. My company always orders lunch for meetings in the 12 o’clock hour, but 9 times out of 10 I opt to eat my own!

For starters I had a side salad with arugula, mini sweet peppers, cucumbers, a drizzle of lemon olive oil, and a tbsp of nutritional yeast.

For the “main course” I had an ezekiel english muffin with leftover Chickpea & Avocado salad. I told you guys it would turn brown… And I promise it still tastes good. 🙂

Afternoon Snacks:

This afternoon’s work snack was a two-parter.

First – a slice of Trader Joe’s “Just Mango” Mango Slices. These are seriously nature’s fruit roll up! The only ingredient is mango and the taste is to die for. I told my coworker to try giving them to his kids and see if they complain. 🙂

image6-8Second – a Siggi’s coconut yogurt with pistachios and pecan pieces. I have been craving greek yogurt like crazy lately! My stomach has not been the happiest but my taste buds definintely are.

After a 3 mile run, the hanger was real, so I had a brown rice cake with garlic hummus while I roasted up a storm for dinner. This garlic lover’s hummus is the jam. Cedar’s is the best!

Dinner

Dinner was pretty magical.

Roasted sweet potato wedges, roasted brussel sprouts, whole roasted beets, and a Hilary’s Eat Well veggie burger topped with tahini.

This was my first time roasting beets and they were great!! I bet they’d be super tasty mixed with chickpeas and goat cheese.

Dessert:

This dessert is my current favorite!

Frozen cherries/blueberries and Essentially Coconut Creamy Cashew Coconut Butter (what a name!) nuked in the microwave and topped with a sprinkle of Purely Elizabeth Blueberry Hemp Granola. Too. Dang. Good.
