WIAW: Fruit Frenzy

Happy Hump Day, loves!

The first two weeks coming back from the New Year seemed to crawl, but this one has been flying by. Monday was busy, and then I was out of the office on Tuesday for a work recruiting event, so the mid-week mark arrived before I knew it.

Aside from work, life has been pretty good. I traded in the keys to my old yellow Nissan X-Terra in favor for a much newer, sportier, sleeker whip (insert sunglasses smiley emoji here). This was my first big ticket purchase, and I can’t help but feel a little more “adult” now that I’ve crossed it off my list.

Food has been super delicious as well – enter, What I Ate Wednesday.

Breakfast:

I woke up at 5:30 to complete a Legs & Cardio circuit from the Kayla Istines Bikini Body Guide (also known as “BBG”). I am currently on Week 3 of Pre-Training and am SO glad I decided to go through the 4 weeks of Pre-Training before starting the actual guides. Pre-Training is formatted the exact same as the rest of BBG, but eases you in to using weights and increasing reps. I started using weights this week and it is no joke! I’m loving this change of pace from my typical Pure Barre workouts. My wallet isn’t complaining, either. 😉

After BBG, showering, and getting ready for work, I whipped up a big bowl of egg white oatmeal. Warm oats were ALL I wanted this morning. I seriously thought about them throughout the whole second half of my workout. It was quite the burpee/jump squat motivation.

I made my bowl of egg white oats with 1/2 cup rolled oats, 1 cup of water, 1/2 a banana, a spoonful of ground chia seeds, cinnamon, and 1 egg white. I was craving all the berries so I plopped some strawberries, blueberries, and pom seeds on top. Plus almond butter for obvious reasons.

After eating, I headed to work in my new whip. I swear I have never been so excited for my commute on a Monday before. Any excuse to drive it around!

Snack:

My metabolism was going strong, so this morning’s snack was a two-parter.

First up was a Lemon Coconut No Bake Protein Bite via Hummusapien. These seriously taste like lemon cake!

Next up was some celery sticks with sunflower butter. I have been loving this snack lately and highly encourage you to give it a try.

Lunch:

On my lunch break, I swung by my parents’ house to pick up a few things that were left in my old car. This meant enjoying lunch in a setting other than my cube, which is always nice.

The salad I packed for lunch ended up being a winner. In the mix was arugula, roasted butternut squash, lentils, cherry tomatoes, and avocado with Oh She Glows lightened up lemon tahini dressing.

SO GOOD.

I also had a Hummusapien Vegan Chocolate Banana Muffin because they’re my favorite. Going on round 4 of making this recipe with no signs of stopping.

Snack:

Afternoon snackage was simple.

Around 3:00 pm I had a delicious gala apple with a couple of almonds. I have been eating an apple a day for the last week or two and can’t get enough. They’ve always been a favorite, but the love is in full force as of late. Especially when paired with almonds/almond butter… Phew!

Dinner:

Dinner was veggie-filled and delicious. I prepped a batch of mashed cauliflower on Sunday and have been enjoying it with dinner for the last few nights. I finally made a batch that wasn’t soupy, which is a huge success for me.

I dished up a big ole plate of mashed cauli, turmeric roasted tempeh, roasted asparagus, and 1/4 an avocado. And of course I drizzled a little Fix Siracha on the side for some kick.

Immediately after dinner I was craving some fruit, so I had this (x3) of fresh blackberries. Today was quite the fruit frenzy, especially if you count the avocado and tomatoes (which still confuses the heck out of me).

Night Snack/Dessert:

I spent the rest of the evening working on this blog post and watching The Bachelor with my roommate and one of our friends. Can anyone else never seem to stay awake past the first hour of The Bachelor? I always check out around 9 and finish the rest of the episode the next day. Granny life.

Before I hit the sack, I snacked on a piece of Lily’s No Sugar Added dark chocolate. It’s vegan and sweetened with stevia, so I had to give it a go. It wasn’t super sweet, which I enjoyed because I like my dark chocolate to be a little bitter!

I also had a spoonful of Wild Friends Honey Pretzel Peanut Butter. Because chocolate + peanut butter = the perfect combo. 🙂

Also, now you all can see my nut butter collection. I also have two more in the fridge…. #nutbutterloversanonymous

    I’m with you, I like my chocolate DARK! Lately I’ve been snacking on popcorn ALL. THE. TIME. Mixed with this grain-free granola I make and dark chocolate (plus an apple in the side for good measure), it’s the perfect snack!!!

    Dark chocolate for the win! I’ve been transitioning over to more plant-based eating habits and I am very thankful that dark chocolate can still be on my radar when I’m in need of a treat!

    Dark chocolate all the way! Although I have to admit I’m a sucker for white chocolate on fancy occasions. My go-to snack this week has been a quinoa, black bean, edamame, sweet pea, roasted sweet potato mix I made on Monday and has lasted all week as a salad topper or a quick snack. Usually I go for more sweet/salty snacks but this savory one has hit the spot! I’ve got my eye on that vegan chocolate banana muffin recipe you just shared though 🙂

      um YUM – that sounds so good! I want to try it on salads or with lettuce/avocado/hot sauce! and they’re the best muffins ever… i make them without the instant coffee and they turn out perfectly!
