WIAW: First Edition

Happy hump day, friends!

One thing I love about Wednesdays in the blogosphere is the hip and happenin’ trend that is “What I Ate Wednesday,” or WIAW, for short. If you’re new to this concept, here’s the sitch –

Basically, every Wednesday, certain bloggers dedicate a post to a full day’s worth of eats on the blog. I absolutely love these posts, not only for the food pictures, but for the realism of it all.

Life isn’t always beautiful smoothies and artsy bowls of oatmeal. It’s snacks at the counter and lunch out of tupperware. WIAW gives bloggers a chance to show a glimpse into their reality- whatever that may be.

So let my first WIAW commence! The good, the bad, and the ugly. 😉

Breakfast:

A post-Pure-Barre strawberry-banana smoothie bowl! Into the blender went baby kale, frozen strawberries, a frozen banana, Vega One vanilla protein & greens, a handful of raw oats, and a spoonful of chia seeds. Toppings included blueberries, raw pepitas & pecans, and Purely Elizabeth blueberry hemp granola.

Mid-morning snack:

Cucumber slices & sugar snap peas. I absolutely cannot get enough sugar snap peas lately! They’re the perfect combo of crunchy, refreshing, and sweet.

Lunch:

A salad eaten during a lunch meeting! A base of massaged kale in olive oil & apple cider vinegar with green bell pepper, grape tomatoes, garlic & paprika roasted chickpeas, hardboiled egg, nutritional yeast, and super brown avocado. A peach eaten on the side as well as a little bit of Trader Joe’s Go Raw Trek Mix.

Afternoon Snackin’:

& a brown rice cake with hummus before cooking dinner.

Dinner:

This was one of the best dinners I’ve made myself in quite a while! Pan-seared tempeh in Trader Joe’s Island Soyaki, garlic roasted asparagus & cherry tomatoes, & a baked sweet potato topped with tahini.

Tahini + Sweet Potato = Heaven

Night snackin’:

Frozen blueberries heated up in the microwave with a dollop of Wild Friends cinnamon raisin peanut butter. Plus couple un-pictured Purely Elizabeth granola clusters.

Oh yeah, did I mention I eat a lot? 😉

    That tempeh looks unreal😍 you should post the recipe😜 but seriously all your food is so pretty!! Normally I eat half of mine before I remember to take a picture hehe. Love your blog though!!

      You haveeee to try it! Just sear the tempeh in a pan then splash in some Trader Joe’s soyaki… Its the stuff of dreams! And thank you so much!! It took a conscious effort (and self control) to take pictures of everything first. So glad you commented so I can check out yours too 🙂
