It’s Wednesday. So let’s oogle at all the things I ate in a day.
I woke up in the morning after a somewhat restless night’s sleep to an unwelcome 5:30 am alarm. It took everything in me to simply pry my eyes open and hit the snooze button on my iPhone. In the following 5 minutes of silence, I went through an internal battle in my head: to workout or not to workout.
I ultimately decided to forego my planned morning workout in favor of an extra hour of sleep. It ended up being the right decision, because I woke up feeling energized and ready to tackle Monday by storm. After getting ready, I headed out the door a little earlier than normal to make an 8:00 am eye doctor appointment on time.
This was easy peasy thanks to a little Sunday evening prep work.
The evening before I made a batch of banana egg white oats on the stove and stuffed them in an empty Trader Joe’s peanut butter jar to enjoy in the morning. Tasty and portable.
I decided to top them with heated up frozen blueberries and blackberries, which created a PB&J flavor unlike any other. If you love this classic combo – try adding banana, blackberries, blueberries and peanut butter to your morning oats or smoothie!

After a successful eye doctor appointment (new glasses on the way!), I arrived to the office around 9:30 am. My stomach was rumbling in full force shortly after, and I knew I needed something substantial if I wanted to last until lunch. I broke into my desk stash for a Chocolate Sea Salt RXBAR and was one happy lady.
I spent the remainder of the morning diving headfirst into some work, so the lunch hour rolled around before I knew it. In my lunchbox was a batch of Winter Kale Salad, an apple, and a peanut butter protein cookie dough bite. I shared the recipe for these protein bites on Instagram for National Peanut Butter Day. I suggest checking them out because they are so good and take all of 5 minutes to make.
Afternoon snacks were business as usual. Celery and carrot sticks with almond butter.
And the last of my vegan chocolate banana muffins. Don’t worry little guys – I’ll be back for you as soon as I have 2 ripe bananas!
After driving home from work, I knew I would need a little something extra to get through my workout and cooking before I could sit down for dinner. I snacked on half of an apple + blueberry That’s it bar to tide me over.
I absolutely love these bars! They’re made fruit… THAT’S IT. No funky ingredients or things you can’t pronounce. The company was kind enough to send me a box, so I can’t wait to try some of the other flavors like apple + coconut and apple + strawberry.
After completing a Kayla Istines BBG arms/abs workout, I whipped up a dinner of roasted sweet potato “fries”, turmeric kale, roasted broccoli, and roasted tempeh. Dippage included garlic hummus and dijon mustard, because things are always better when you dip them.
I won this granola in a giveaway from the sweet couple behind The Newly Fed Weds and it is ridiculously good. It will definitely be popping up for dessert around these parts more in the weeks to come!
