What I Ate Wednesday: Spring Cravings

Hi everyone! How’s it going?

I’m back for the second day in a row. I couldn’t leave you hanging any longer for a new What I Ate Wednesday post. 🙂

For the last few weeks, we’ve been enjoying some 60-70 degree temps here in Georgia. One of the things I love most about warmer weather (besides the actual warmer weather) is the light, fresh food that it brings. I have been craving big salads and juicy fruit like no other lately. On this day in particular, we actually experienced a dip in our temperatures, but you’d never know by my food choices.

I started off the morning with one of my favorite breakfasts – overnight oats in an empty almond butter jar!

I combined 1/2 cup of old fashioned oats with 1 tbsp of Salba Chia seeds, a scoop of Nuzest vanilla protein powder, and 3/4 cup of unsweetened almond/coconut milk in the jar and let them sit overnight. In the morning, I topped my cold oaties with raspberries and strawberries and dove in.

After heading to work, I plugged away at a few projects before digging into a snack and cup of ginger tea around 10:30 am.

I have been loving these mini GoMacro bars for mid-morning snacks, because they are just the right size to tide you over to lunch. This flavor is one of my favorite of GoMacro’s, but who doesn’t love the chocolate/peanut butter combo?

I was in a meeting until 12:30, so I was more than ready for lunch when we finished up. I headed to my mom’s house for my lunch break to eat, listen to the Happier podcast, and drop off a load of my apartment stuff. This weekend I’m moving home for a month between apartment leases, so I’ve been lugging loads of clothes, books, toiletries, etc. to the house each day this week.

After all the heavy lifting of my apartment goodies, I enjoyed a salad fit for a queen.

I topped a bed of spring mix with quinoa, mini bell peppers, radishes, green peas, hardboiled eggs, avocado, goat cheese, and a few walnuts for crunch. For dressing I added a few tablespoons of my homemade balsamic-orange-dijon dressing, which is so simple to make. Simply blend together 1/2 cup of orange juice, 2 tbsps of balsamic vinegar, and 2 tbsp of dijon mustard. It’s sweet, spicy, tangy and magical.

And after lunch I couldn’t help but dig into a few clusters of my latest foodie delivery.

I recently won a giveaway for Michele’s Granola and BOY is this stuff good. Seriously… The lemon pistachio flavor is so delicious, my mouth is watering just thinking about it.

The rest of the afternoon was spent working at my desk. We have Good Friday off at my office, so the promise of a long weekend has served as my motivation to be extra productive this week. To power through the afternoon, I snacked on an Almond Coconut Perfect Bar.

I have slowly but surely become obsessed with Perfect Bars. They’re higher calorically (260-320), and full of good-for-you fats and protein, so they do a better job at keeping me full through the afternoon than other bars. If you’ve been on the fence about trying them, definitely give it a go! All the flavors are beyond delicious.

I was planning on taking a 5:30 pm Pure Barre class with my mom after work, but I had a 5:00 pm meeting come up so I couldn’t attend. I was bummed at first, but it ended up being alright because my body wasn’t feeling super gung-ho on working out. Instead I used the rest of my evening to roast some veggies, pack up my car with another load of stuff, do some blogging, and read. It was really nice!

For dinner, I roasted some broccoli, sweet potatoes, parsnips, and tempeh. I ate these babies fresh out the oven with a fork-full of Roots Mango Siracha hummus. I cannot get enough of this stuff – I’ve put it on just about everything.

I had a little sweet tooth after dinner, so I rounded out my veggies with a piece of dark chocolate dipped in Essentially Coconut Sweet Almond Coconut butter.

I think this is what dreams are made of.

Before hopping in bed to read, I ended the night with a little spoonful of peanut butter to tide me over until breakfast.

    I’ve been craving similar foods to you! Fresh, crunchy wraps with as many (or more, really) veggies that will fit. Being at the beach has me eating some fish, I had a super delicious blackened Wahoo at dinner the other night. I had never even heard of that type of fish. I’m hanging out with my grandparents right now while hubs is gone for pilot training and my aunts just left, so I’m really planning to turn up the vegan cooking for the next few weeks- until my siblings come for a week 😉 So tonight’s menu is The Foodie Physician’s veggie burgers (I’ve been craving them for like a month now and haven’t yet gotten my fix) with baked sweet potato wedges and asparagus.

    One question for you- do you roast your tempeh right along with your veggies? Same temp and time and all that?

      mmmm big veggie wraps are the best and so is blackened fish! i’ve never checked out those veggie burgers before but i am about to do some googling. and yes i do! i just chop it up and season however i’m feeling and roast it on the pan with the veggies! its so simple. hummus dippage not optional 🙂
