Hi my friends… I’m back!

The last month of my life has been a complete whirlwind. If you know me personally or follow my blog on Instagram, then you know that my family has been going through an enormous loss.

On Leap Day of this year, my dad unexpectedly passed away from a brain tumor.

Even writing this now, it seems unreal. Like it’s not actually happening to me.

The last month has been difficult, I will not lie. The emotions come in waves, but I’ve been trying my best to fall back into a routine and figure out my new “normal.”

We had all of my dad’s family in town for about a week, and then I took a week off from work to process and recharge. Last week was my first full week back at work, and it’s felt good to have a sense of normalcy (and a distraction).

I intend to write a blog post about what happened eventually, but I’m not sure when I will be ready. For now, I’m easing back into blogging with a good ole’ photo-heavy life update. I’m breaking this up into three sections – food, fitness, and randoms.

Let’s catch up!

FOOD

My appetite has been back in full force for the last few weeks. After a week or so of Chipotle, pizza, and not eating enough, I set out on on a mission to fuel my body lots of nutritious food.

Breakfast has been business as usual.

Blueberry chocolate coconut smoothie bowl with coconut chia granola and cacao nibs.

Oats with almond butter, chia/flax blend, and berries.

Lunches and dinners have been colorful and veggie-heavy.

The makings of my greek quinoa salad.

Massaged kale salad with roasted beets, avocado, sweet potato, hardboiled egg, and sliced almonds.

One pan dinner of zoodles, brussels sprouts, edamame, pine nuts, garlic, and nutritional yeast.

Quinoa with nutritional yeast, brussels sprouts, edamame, egg, tahini, and Fix siracha.

Lunch power bowl with sautéed spinach, brussels sprouts, sweet potato, egg, and avocado.

I’ve made sure to keep my mom and brother well fed too. 🙂

We made avocado black bean burgers in collard wraps with baked sweet potato wedge “fries”. I added salsa to the burger after the photo which was such a good move.

We also made pistachio-crusted salmon from the Eating Purely cookbook with roasted sweet potatoes and garlic brussels sprouts. This is one of my favorite recipes!

I’ve also been obsessing over a few new foodie items.

Cara cara navel oranges have been my citrus of choice the last few days. They’re pink like grapefruit but so sweet and tangy. In love.

Trader Joe’s plantain chips and Roots Mango Siracha hummus. Both amazing on their own, and life changing when paired together.

I told ya my appetite was back! 😉
FITNESS

Re-establishing a steady workout routine has been hard. My body has definitely not felt as strong as it did before this all happened. I swear that loss takes a toll on your whole body – emotionally and physically. I’m trying to let myself “heal” and taking it easy as I get back into things, without getting frustrated.

Workouts have consisted of Pure Barre, power walking/jogging on the treadmill, walking/hiking outside, and a little bit of strength training. I also have plans to get a one month new member membership at a local hot yoga studio, which I am so excited about.

RANDOMS

Since we haven’t caught up in a while, here are a few things I’ve been loving lately!

The Voice

I am so late to the game here, but I am OBSESSED with the voice. It’s so good, I’ve literally watched each episode 3 or 4 times and have all their versions of the songs stuck in my head (hello – Hollow by Tori Kelly). I’m in love with Ryan Quinn and Hannah Houston!

Mrs. Meyer’s Soap in Basil Scent

I picked up this hand soap after using/smelling it at a restaurant. The smell is labeled as Basil, but it smells much sweeter than the basil you would cook with. I bought the hand soap and all purpose cleaner in this scent and have been using them every chance I get. My kitchen has never looked so clean. 😉

The Happier Podcast

This is the podcast by Gretchen Rubin, the author of The Happiness Project. I am almost done reading the book, and have been binge-listening to the podcast as well. I listen while I workout, while I clean, and while I commute to/from work. It’s one of my new favorites!

    First of all, you are very strong for posting your struggles on here. I’ll be keeping you in my thoughts, and sending positive vibes your way <3

    Second, all of your eats look amazing and I've had several similar meals recently 🙂 The egg + sriracha combo, I am trying to add more spice in my life, but baby spots of sriracha is all I can handle at the moment.

    I've also been listening to the Happier podcast while driving to work or getting ready in the morning, it's as good one. Makes you think!

    Hi Bailey, I enjoy reading your blog. My thing lately bringing me Joy is spin class. I didn’t think I was in good enough shape to do it. But I have plantar facititis and couldn’t do a lot of pounding on my foot. So I stepped into this spin class and now I am obsessed. The loud music, the ability to control the tension on my bike and still get the best workout of my life. I can think about nothing or anything depending on my mood. I feel so strong and worn out at the same time. It’s perfect, and guess what, I can do it pretty well. So I am feeling a little proud of myself too. Wishing well and love to you all. I am an old work friend of your moms.

    1) I just bought the Meyers Basil Soap on a whim and haven’t tried it yet so I’m SO glad you love it! Can’t wait to start using it!
    2) Thanks for your recommendation for the Happiness podcast- can’t wait to have a listen. I used to really love the Runner Academy podcasts but I’ve been having trouble downloading them recently, not sure if it’s a problem on my end or theirs…
    3) Mediation and yoga have definitely been bringing me lots of joy and peace lately. And when I practice at home, or even just a for a few minutes at the end of a run or another workout, putting on the yoga channel on pandora for those few minutes makes me especially happy.
