This past weekend was one for the books. From watching the Braves play on Friday, to reuniting with my best friends from college on Saturday (and eating at the Ladybird in ATL… So much yes) – the weekend was jam packed, and I loved every second of it.
Needless to say, come Sunday I had put little to no thought into what I was going to eat this week. I knew I wanted something quick and healthy that I could mindlessly toss into lunches each day. When this is the case, mixing together a bunch of whatever I have on hand into a quinoa salad is my go-to.
Thus became this Fresh & Simple Quinoa Salad.
Such a creative name, right? With only a few easy ingredients and minimal steps, this bowl of deliciousness can come to life in the blink of an eye.
Fresh & Simple Quinoa Salad
Things you’ll need:
- 1 cup uncooked quinoa
- 1 can of garbanzo beans (drained & rinsed)
- 1 pint of cherry tomatoes (chopped)
- 1 medium cucumber (chopped)
- Olive oil
- Salt & pepper
- Optional: lemon juice
Start off by boiling 1 cup of quinoa in two cups of water. Once it’s at a boil, cover the pot and bring it down to a simmer. Leave the quinoa covered (don’t peek!) for about 25 minutes. While the quinoa is cooking, go ahead and chop up your veggies and drain and rinse your beans. Once the quinoa is cooked and fluffy, transfer it to a large mixing bowl and mix in the beans and veggies. Once everything is combined, add in olive oil, salt, & pepper to taste. It tastes wonderful plain, or with a squeeze of fresh lemon juice.
And there you have it! Enjoy on its own as a side dish, or add it into a salad for your main meal. Feel free to mix and match the veggies to fit your unique tastes, as well.
