Hello everyone! I hope you all had a wonderful weekend. I think it would be fun to start doing recap posts to share all the things I do/eat on the weekends. What do you think? 🙂
Friday started off on a delicious note with a strawberry-banana green smoothie before heading out to a video shoot for work. Into the mix went baby kale, frozen strawberries/banana, Vega One vanilla protein powder, unsweetened vanilla almond milk, and chia seeds… Plus every topping I could get my hands on.
It was glorious.
Friday evening was spent celebrating National Tequila Day over margs and tacos at La Fonda with some girl friends. If you’re in the Atlanta area and find yourself at La Fonda, I highly suggest ordering their grilled tilapia tacos. They were phenomenal.
Upon waking on Saturday, I whipped up a bowl of cinnamon-vanilla oatmeal by stirring cinnamon, vanilla extract, and a few stevia drops into a normal bowl of oats. After cooking, I topped them with peaches, raspberries, Purely Elizabeth blueberry hemp granola, and Trader Joe’s creamy almond butter.
After breakfast and a dermatologist appointment (skin cancer free!), my boyfriend and I headed to Marshalls and Nordstrom Rack on a mission to find new work shirts. Blake stuck to his original list… I, however, left with new work shirts, a dark aqua bralette, free people booties (half off!), glass tupperware, and Wild Friends Cinnamon Raisin Peanut Butter (only $4!). All great purchases, just a tad unexpected. 😉
While out and about, we stopped at Panera Bread for lunch. I ordered their Mediterranean Chicken Quinoa salad with avocado in place of chicken, and an added hardboiled egg. This combo is absolutely delicious, and a great healthy option for a fast food meal!
After hours of shopping, we got some chill time in around the apartment before heading out on a dinner date to Sun In My Belly. I had been to SIMB for brunch once before, so I was rather excited about trying it out for dinner. The cafe is small and charming, with a warm, quirky ambiance that can’t be beat.
For my meal I ordered the Miso Glazed Salmon with cilantro-shallot couscous and sesame kale. Blake opted for the Garlic Marinated Flank Steak with chimichurri sauce, spinach, and a yucca mash. Let me tell you folks… This meal was fabulous. Each plate was under $16, and the flavor combinations and portion sizes were spot on. I happily cleared my plate and left feeling neither overly full or under-satisfied.
Sunday was spent catching up on laundry, running errands, grocery shopping, roasting chickpeas, and taking a Pure Barre class. I posed the question on one of the day’s Instagram posts – “Do you prefer lazy Sundays, or productive ones?”
I absolutely LOVE productive Sundays. There’s something about getting my ducks in a row before the week even starts that leaves me feeling accomplished and content.
So I ask you the same question – lazy sundays, or productive ones?!
