Why hello! How have you guys been? After a short blogging hiatus due to a crashed hard drive, I am back in action and ready to rumble.
Two Saturdays ago, I was less than thrilled to find my computer doing some funky things. I consulted with my computer wiz friend, only to find out that my hard drive had kicked the bucket. Luckily said computer wiz has fixed this same issue before, and was able to take my computer off my hands and replace the hard drive with skill that I can only describe as magic. Because of his help and generosity, I was saved from a massive headache, a trip to the Apple store, and a lot of extra dough. Shout out to all of the technology savvy people in this world – you are a rare and wonderful breed.
As it turns out, a week away from the computer did me well. My creative juices got to flowing and I was hit with a bunch of ideas for blog posts and things I want to chat about on here. So stay tuned for some fun to come.
Now without further adieu, here is What I Ate Wednesday!
I started off this morning with a craving for a smoothie bowl. I have been craving oats for the last few weeks, so I was excited to mix it up and get blending.
I made a classic PB&J smoothie by blending together frozen spinach/kale, frozen banana, frozen strawberries, Vega One french vanilla, peanut butter, chia seeds, a medjool date, and unsweetened vanilla almond milk. The result was a thick bowl of PB&J goodness. I added a sprinkle of granola and cacao nibs on top and dug in.
Around mid morning, I snacked on a hard boiled egg to get me through until lunch, but failed to snap a photo. Luckily, my lunch photography makes up for it. 😉
I took a photo of my packed lunch the night before while it still looked nice and pretty. I assembled a salad with arugula, radishes, chickpeas, roasted sweet potatoes, and avocado slices with a simple homemade red wine vinaigrette (based off of this recipe). I was intending on having an apple on the side when I took the photo, but in the heat of the moment I swapped it in favor of a paleo banana bread muffin instead. Deeeelicious.
After lunch, I headed out on a walk to get my legs moving. I have been loving my midday walks more than ever now that the warm temperatures are here to stay. Afterwards, I headed into a meeting from 2-4. Since I usually get the afternoon hungries around 3, I made sure to bring a snack with me. I love RXBARS for a portable healthy option.
After work, I drove home and got ready for a sunny run in the neighborhood. I was pretty hungry beforehand, so I had a handful of plantain chips as a light snack to power me through the workout.
I covered about 2.5 miles, walking a good amount of the time. I have been trying to be good about listening to my body during this crazy season of life, and it has been loving to walk. Long walks while listening to a good podcast is my current exercise go-to along with Pure Barre and hot yoga. My body is responding really well to lower-stress forms of exercise, so I’m rolling with it.
After a shower, dinner was ready in a flash thanks to leftovers. The evening prior I made a batch of Hummusapien’s vegan pinto bean and swiss chard enchiladas and they were to die for. Served with remaining swiss chard and avocado slices because what is mexican without avocado?
These enchiladas are a must-make for veg heads and meat eaters alike. They are so satisfying and incredibly easy to make. Try it!
After dinner I was in the mood for something refreshing, so I sipped on a GT’s kombucha while I did the dishes and packed my lunch. Booch always hits the spot.
The rest of the evening was spent messing around on my “new” computer and watching The Voice. My friend updated my operating system, so everything feels new and high tech. I must have had a dinosaur of a system because the screen and icons look so much different… No wonder I was having an issue!
Before bed I heated up half of a banana, a few strawberries, and cashew butter in the microwave and topped it with cinnamon for a warm, gooey snack. I also had on a brown rice cake for crunch.
Shortly after I dove into my current read, The Silkworm by Robert Galbraith (aka JK Rowling). It’s the second book in the Cormoran Strike series and it is just as good as the first so far. I highly suggest checking them out if you’re a JK Rowling or mystery fan.
